INGREDIENTS

1 cup dry brown rice

2 cups water

2 tbsp cold pressed coconut oil or organic, grass fed butter

1 small chopped onion

1 cup grated carrots

1 cup  broccoli, coarsely chopped

½ cup corn kernels (frozen or fresh)

 ½ cup green peas (frozen or fresh)

½ cup chopped greens (kale, chard, spinach, etc)

2 free range eggs

1 cup of unpasteurized Sauerkraut or Kimchi

2-3 Tbsp of Tamari

Green onions to garnish

DIRECTIONS

Add rice to medium sized pot with 2 cups of water, bring to boil then reduce heat and let simmer for 35 min without opening the lid. Note: this recipe works best if rice is made in advance and completely cool. 

In a large stainless steel pan heat coconut oil at medium heat and add onions, cook for 2-3 minutes. Add carrots, broccoli, corn, peas and cook for another 5 – 8 min. Add cool rice and greens and stir to heat up.

 

Crack eggs into center & slowly start incorporating them into the rice as it cooks. Once thoroughly mixed, remove from heat and season with tamari. Mix in Sauerkraut & garnish with green onions just before serving.

 

For optimal digestion: Soak rice for at least 7 hours and rinse before cooking

Optional Add-ons: Organic grass-fed beef, organic free range chicken, other veggies such as; zucchini, peppers, sprouts, etc

Fermented Foods (including unpasteurised sauerkraut) are amazing for healthy digestion, promoting healthy microflora, strengthening the immune system and stabilizing mood/mental health. Purchase sauerkraut from the refrigerator section of your grocery store and vinegar free.
