INGREDIENTS

Serves 8 (or makes lots to freeze for leftovers!)

  • 1 lb ground beef

  • 1 lb ground pork

  • 1/4 cup chicken or beef liver, finely chopped or ground with a food processor/blender

  • 1/2 cup onion, diced

  • 2 tsp sea salt

  • 1/2 tsp ground pepper

  • 2 cloves garlic, minced

  • 4 TBSP sauerkraut or pickle juice, or 2 tsp apple cider vinegar

DIRECTIONS

  1. Preheat oven to 350 F

  2. In a medium bowl, combine all ingredients, and mix well. Often, doing it with your hands is the easiest way. 

  3. Form mixture into meatballs, and place on a parchment-lined baking tray.

  4. Bake for 35 to 40 minutes, flipping partway through.
