INGREDIENTS

FILLING

 

5 cups of blueberries

2 tbsp brown rice flour

2 tbsp fresh lemon juice

2 tbsp pure maple syrup

2 tbsp chia seeds

 

TOPPING

2 cups of rolled oats

1/2 cup buckwheat flour

2 tbsp cinnamon

1/2 cup coconut oil, melted (or grass fed organic butter)

1/4 cup pure maple syrup

DIRECTIONS

Preheat oven to 350⁰F.

Mix filling ingredients together in a medium size bowl and spread evenly in a 8x12 baking dish. Combine topping ingredients and spoon over filling mixture until completely covered. Bake for 1 hour or until blueberry juice begins to bubble through the center. Cool for 10-15 min before serving.  

 

Optional: Add other additional fruits such as apple, strawberries or even rhubarb!
